**Vineyard**
Mar de Frades AlbariΓ±o is sourced from selected vineyards in the Val do SalnΓ©s, including both estate-owned and those managed by independent winegrowers. The methods used are environmentally friendly and honour the winegrowing traditions of the RΓas Baixas D.O.
**Production**
A manual harvest is carried out using small crates, and the grapes are carefully selected. The must undergoes maceration using the Ganimede method for 8-10 hours, optimising aroma extraction and preserving the grapes' saline character, without the use of sulphur derivatives. Fermentation occurs with indigenous yeasts to maintain the regionβs characteristic aromas. This is followed by meticulous lees ageing, which adds volume and balance to the wine and enhances its longevity.
Mar de Frades AlbariΓ±o pairs wonderfully with a variety of fresh and flavourful dishes. Its vibrant acidity and saline character make it an ideal match for seafood, especially shellfish such as oysters, clams, mussels, and prawns. It also complements grilled fish, sushi, ceviche, and white meats like chicken or turkey with citrus-based sauces.
