BARBADILLO PALE CREAM SHERRY
**Production Process**: This blended wine is meticulously crafted from a combination of wines that have undergone both biological and oxidative ageing, depending on the body of the wine. Biological ageing occurs under a film of flor yeast during a phase known as *sobretablas*. Oxidative ageing, on the other hand, results from the interaction of oxygen with the wine inside old American oak sherry casks, following the traditional yet dynamic system of *criaderas* and *soleras*. Oxidative ageing is the predominant process in the production of this wine and, as a result, defines its character.
**Serving Suggestions**: With its fruity aroma and intense colour, this wine is an excellent choice as an aperitif, pairing well with nibbles such as cheese, nuts, olives, and canapΓ©s. Its pleasing and bold flavour makes it an ideal match for dishes like white meat curries, roast pork, sautΓ©ed rice with pine nuts and raisins, or foie gras. It also shines at the dessert course, especially when paired with cured cheeses, raisin ice cream, or chocolate with banana cream and nutsβsimply delicious!
To best enjoy the wine's unique qualities, it should be served at an ambient temperature between 12ΒΊC and 15ΒΊC in a wine glass, whether enjoyed as an aperitif or with a meal. For a twist, try serving it in a brandy glass with a slice of lemon.
