BARBADILLO CREAM SHERRY
This is a blended wine, meticulously crafted from a selection of wines that have undergone both biological and oxidative ageing, depending on the body of the wine. Biological ageing occurs beneath a layer of flor yeast during a stage known as "sobretablas." Oxidative ageing, on the other hand, is influenced by the action of oxygen within old American oak sherry casks and the traditional, yet dynamic, criaderas and soleras system. Oxidative ageing is the dominant process in the creation of this wine and, as a result, shapes its defining character.

The wine's fruity aroma and deep colour make it an ideal choice as an aperitif, perfectly paired with nibbles such as cheese, nuts, olives, and canapΓ©s. Its pleasing and intense flavour complements dishes like white meat curries, roast pork, sautΓ©ed rice with pine nuts and raisins, or foie gras. It also shines at the dessert course when served alongside cured cheeses, raisin ice cream, or chocolate with banana cream and nuts β simply delicious!
To fully appreciate the wine's special qualities, it should be served at an ambient temperature between 12ΒΊC and 15ΒΊC in a wine glass, whether enjoyed as an aperitif or with a meal. For a twist, try serving it in a brandy glass with a slice of lemon.
