TIO PEPE DRY SHERRY
Fino sherry is produced by fermenting the must of the Palomino grape and then fortifying it to 15%, which encourages the formation of *velo de flor*βa layer of yeast that plays a key role in developing its distinctive organoleptic characteristics. It undergoes biological ageing for a minimum of two years in American oak casks, following the traditional *criaderas* and *soleras* system.
