APRIMONDO SANGIOVESE APPASSIMENTO

Production Method

The grapes chosen for this wine are hand-harvested from the hills of Romagna and then dried for up to 60 days in a controlled environment.

Fermentation occurs in stainless steel tanks of 100–300 hl capacity at 25-26°C for a period of 10 days, during which the wine remains in contact with the skins. This is followed by malolactic fermentation, after which the wine is stored once more in stainless steel tanks.

The finished wine contains approximately 10 g/l of residual sugar.

It is best paired with rich dishes based on red meat, spicy cuisine, or hearty soups.
