Amontillado gets its unique flavour from two stages of aging - first protected by a layer of yeast, then exposed to air to develop more complex, nutty notes. Unlike the deeply sweet and fruity character of Pedro Ximenez or Oloroso sherries, Amontillado offers a drier, more savoury character. This complements the rich and savoury new-make selected for it's synergy with Amontillado casks.
