DIATOMISTS OLOROSO 12 YEAR OLD SHERRY
**Singular Botas** refers to unique or individual barrels (*botas*) used in the ageing process of wines, particularly in the production of Sherry and other fortified wines. Each *bota* can impart its own distinctive characteristics to the wine, depending on factors such as the wood, previous contents, and ageing conditions. Wines aged in *singular botas* often represent a more specialised or limited expression, capturing the unique qualities of the specific barrel in which they were matured. This concept is highly valued in traditional winemaking, as it showcases the individuality and complexity of the wine.
Brilliant mahogany lights up the glass, setting the stage for an enticing aroma of toasted hazelnuts. Crafted from 100% Palomino and aged for 12 years in *bota*, this Oloroso is exceptionally silky and refined, offering a luscious mouthfeel. A burst of orange peel adds a pronounced freshness, perfectly balancing the brooding, nutty flavours at its core. The solera method reveals itself on the finish, with lingering notes of vanilla and cigar box that are both persistent and long. It makes the perfect accompaniment to game or an after-meal treat, with or without cheese.
